the way i've been eating them for years...
i love them...my kiddos love them...the hubster loves them...
sarah at a *a beach cottage* would love them...
a big batch to share with all the readers of a *b.c's Good Life Wednesday*...
i whip these up just before school pick-up so they are still warm & sooo tempting when the kiddos get home....
more tempting than sweets...biscuits...all that rubbish they hope for after school...
&
they have 2 whole cups of banana in them...
how brilliant do i feel about this...
as i have a non-fruit eater...
actually she does eat apples....apparently most days...!?
but that's it...
she.does.not.ever.never.eat.bananas...
except in banana muffins...
yep...i am aware it has sugar & vanilla essence & eggs & blah blah...
but in my book...a banana is a banana...no matter what!
so for a good life wednesday treat...
grab the kiddos...
grab the big ol mixing bowl...
grab those gorgeous muffin cases you've been saving...
&
whip up a divine batch of heavenly muffins...
they make homework a pleasure...{i promise}...
& they're ever so healthy...
& they are quite lovely with ice cream...
& quite lovely with lashings of icing...
& they are really healthy...did i mention that...?
so here's the goodies you'll need
i basically *bung* them in a bowl whilst gathering *after-school* stuff we'll need!
banana muffins
1/2 cup butter
1 cup sugar
2 eggs lightly beaten
2 cups bananas -mashed
dash vanilla
2 cups SR flour
1 teaspoon bicarb soda
1/2 cup milk
big bowl
bung it in
mix with a wooden spoon
spoon into cute muffin cases
cook in oven 15 mins
or
till springy to touch
gasmark 5/ 350 f/ 180 c
eat whilst warm
be sure to let me know how homework went over a batch of these little crackers!

ReplyDeleteI made banana muffins last night with blueberries inside, it's what I make when I want to send them off with a little comfort in their lunchbox. Doots' first day of kinder today!
Bananas have skyrocketed in price here, because of the cyclone, so I don't know if we'll have excess in the fruit bowl for a while :(
I made banana bread last night from the Betty Crocker cookbook. I had some old bananas that I needed to use. Next time I will make muffins. The vanilla in this recipe sounds really good too.
